is there a way to remove all the instructors from the course cards, OR JUST the logged in instructor shows up,
the reason is lot of instructors show to a logged instructor that just creates mess & privacy issue as one instructor has to do nothing with other instructors.

Please try adding this custom css in your wp-admin-> appearance-> customize -> custom css :
.course_instructor {display:none !important;}
yes thats already done with this hack,
but i was focused on to show just on logged instructor, if you can help in this regard, please lets know when this will be possible in (near) future.
For now it will work.

its the screen visible to the student only , instructor would have option to " manage courses " as well .
Im not able to understand which condition should I match ?
this student is also instructor of course as you shown in screenshot
